Can you believe that Christmas is only a little over a month old? I know! It's crazy, and we feel that this year has just passed. Intellectually, I know that's not the case, but that's for sure!
Every year, I tell myself that I will be ready well in advance for the holidays. Every year, it falls on me and I spend the weeks leading up to the big day like a chicken with my head cut off, running here and running over there. get all my ducks in a row.
Of course, my back that really put me out of use in the last two months did not help. I have not really been able to go far or do much. Fortunately, I'm starting to see the end of the tunnel there and the situation is greatly improved with regard to pain! Phew!
It's as good as my children did not come in November as originally planned because I could not have done much with them. So, these things always happen for a reason! I hope that when they come in April, I will be 100% at my best!
This quick and easy pan-fried dinner will prove very useful in the coming weeks.

He uses things that I always have in my pantry for occasions like this. . . Canned Chili with beans. I like the Chile Stag. Cooked white rice Here you can buy it in pouches, all ready to heat. Some companies do it. Including Uncle Ben, Veeta and Tilda.
Most stores also have their own versions. Apart from that, you just need a bit of chopped onion, green pepper and a little cheese for you to use later, with sliced black olives.
This goes together quickly and in all truth, you can have it on the table in less than half an hour in total. On the side, all you need is a salad and crusty bread, if you wish.

A simple and quick dinner that will warm your bowels and fill you with the belly of yum, yum, yum. On the side, all you need is a salad and crusty bread. Perfect for busy days.
- 2 cans (425 g) bean chili (15 1/2 oz cans)
- 1 bag of long grain white rice ready to use (2 cups)
- 1/2 of a small onion, peeled and chopped
- 1/2 of a small green pepper, trimmed and finely chopped
- Sliced black olives
- 60 g grated cheddar cheese (1/2 cup)
How to cook dinner with chili pans by the fire
- Mix the chili, rice, onion and green pepper in a deep skillet with an airtight lid. Place on low heat and cover well. Stir occasionally and cook for about 20 minutes until the mixture is hot and bubbling. Sprinkle with cheese and olives and continue cooking until the cheese is melted. Serve hot.
